Blood Orange Upside Down Cake

INGREDIENTS
For the cake:

2 blood oranges, cut into quarters

¾ cup vegetable oil

2 cups sugar

4 eggs

1 tbsp vanilla extract

2 cups all-purpose flour

1 tbsp baking powder

1 tsp salt
For candied oranges:
- 1 blood orange
- 1 cara cara orange
- 1 navel orange
- 1½ cups sugar
- 3 cups water
DIRECTIONS

Thinly slice each orange. In a medium pot, add ¾ cup sugar and 1 cup of water. Bring to a simmer then add orange slices and cook for 20 minutes, until translucent. Remove from heat and allow to cool.

For the cake batter, put all the ingredients into the Dash Chef Series Digital Blender. Blend until smooth, for about 90 seconds.

Preheat the oven to 350ºF.

Line a 9" circle cake pan with a single sheet of parchment paper so it covers the bottom and sides of the pan.
- Arrange the orange slices in the bottom and up the sides of the pan. Then pour in the batter into the pan, filling it up a little more than half way.
- Bake for 40 minutes.
- Remove from the pan by flipping and gently lifting. Enjoy!
