In a separate bowl, whisk together the sugar and egg. Thoroughly mix in mashed bananas, vanilla extract, and oil. Add the dry ingredients to the wet ingredients, mixing until well combined. Scoop batter into a 1-gallon plastic bag and seal partway. Snop off 1/8" from the corner of the bag. Use bag to pipe batter into each Donut Bite Mold. Close and bake for 2-3 minutes.
