Ingredients
2¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
1 cup softened butter
1½ cups sugar
1 egg
1 teaspoon vanilla extract
3-4 tablespoons buttermilk

Instructions
Preheat oven to 375°F and set aside an ungreased cookie sheet. In a small bowl, add flour, baking soda, and baking powder. Use the Hand Mixer on low speed to combine. Set aside.
In a large bowl, add butter and sugar. Use the Hand Mixer on high speed to combine until smooth. Continue mixing on high speed and beat in the egg and vanilla.
Continue mixing on high speed and begin to gradually add in dry ingredients. Mix until combined.
Continue mixing on high and add just enough of the buttermilk to moisten the dough and make it soft, but not enough to make it wet.
Once moistened, stop mixing and set Mixer aside. Use a teaspoon to form small balls of dough. Place dough balls onto cookie sheet.
Use a spoon to slightly flatten the top of each cookie and brush the top of each with buttermilk.
Bake for 7-9 minutes or until edges are just beginning to turn brown. Remove from oven and allow to cool before serving.
