A perfectly cooked fish fillet on a round white plate, garnished with two thin lemon slices, fresh dill sprigs below it, and placed atop a bed of vibrant green lettuce leaves.

Ingredients

  • 1 whole, head on fish, cleaned, gutted, and de-scaled

Spice Blend for Fish:

  • 1 teaspoon Italian seasoning

  • ½ teaspoon smoked paprika

  • ¼ teaspoon red pepper flakes

  • ½ teaspoon onion powder

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 5-6 cloves garlic, minced

  • 2 tablespoons oil

Vegetables & Herbs:

  • 2 cups zucchini, halved then sliced

  • 1 cup red bell pepper, diced

  • 1 medium onion, diced

  • 1-2 lemons sliced thin, more for garnish

  • 2 tablespoons butter

  • Fresh basil, to garnish

Lemon Sauce:

  • 1 cup vegetable broth

  • Zest and ¼ cup lemon juice, about 1 large lemon

  • 1 tablespoon oil

  • 1 tablespoon butter

  • 1 tablespoon chopped parsley, more to garnish

  • Lemon wedges, to serve

Instructions

  1. Prepare the spice blend by adding Italian seasoning, paprika, chili flakes, onion powder, black pepper, salt, and oil to a large bowl. Mix to combine and set aside.

  2. Place the fish on a piece of parchment paper and brush with spice blend. Set aside.

  3. Add zucchini, peppers, and onions to the spice blend bowl and toss to combine. Set the Air Fryer to 350°F. Place the veggie mixture into the Air Fryer Basket and cook for 20-25 minutes or until veggies are soft and some edges are crispy. Shake the veggies halfway through this cook time.

  4. Leave the veggies in the Air Fryer and add the fish on top. Dot with butter and lemon slices and continue to cook for another 12-15 minutes.

  5. Prepare the lemon sauce by adding oil to a medium sauté pan. Bring to medium-high heat and add vegetable broth, lemon juice, and olive oil. Simmer the sauce until it has reduced by half. Add butter and whisk until combined. Remove pan from heat. Season with salt and pepper and add lemon zest and chopped parsley.

  6. To plate for serving, layer a serving platter with the roasted vegetables then top with fish. Drizzle with lemon sauce, and garnish with chopped parsley, fresh basil, and lemon slices.

  7. Serve and enjoy this fresh and zesty main course!
