Ingredients
1½-pound pork butt, cut into 2 pieces
1 tablespoon kosher salt
3 tablespoons soy sauce
2 tablespoons maple syrup
3 cloves garlic, minced
1 cup yellow onion, diced
2 sprigs rosemary, leaves only, minced
1 teaspoon Ancho Chile powder
½ teaspoon habanero pepper, seeded, minced (optional)
1 dried guajillo pepper, rehydrated, chopped (optional)
2 teaspoons dried piquillo pepper, chopped (optional)
¼ cup fresh salsa
2 tablespoons cilantro, chopped
2 tablespoons canned chipotle pepper, juice only
1½ limes, juiced
¼ teaspoon ground black pepper
2 sprigs oregano, leaves only
½ teaspoon ground cumin

Instructions
Combine all ingredients in a large mixing bowl. Stir to mix thoroughly. Cover and move to the fridge to let marinate for 8 hours or overnight.
Transfer pork (but not the marinade) to the Air Fryer and cook at 400°F for 10 minutes, flipping halfway through. Reserve marinade.
Reduce heat to 250°F and cook for approximately 1½ hours, flipping every 10-15 minutes until pork is cooked through and shreddable with a fork.
Pour marinade into small skillet on the stovetop and cook over high heat. Bring to a simmer then lower temperature to medium. Let cook 3-5 minutes until marinade thickens.
Transfer cooked pork from the Air Fryer to the skillet and stir to combine pork and marinade.
