Cilantro Lime Rice

Ingredients
- 1 tsp olive oil
- 1⁄4 cup chopped onion
1 clove garlic, finely chopped
- 3⁄4 cup long-grain jasmine rice
- 1 1⁄4 cup water
- 1⁄8 tsp sea salt
- 1 tbsp freshly squeezed lime juice
2-3 tbsp cilantro, roughly chopped
Zest and juice of one lime
Directions
Add olive oil and chopped onion to Removable Pot and cook.
When onion begins to soften, about 3-5 minutes, add garlic, rice, water, and salt. Cook until all water is absorbed, about 20-25 minutes.
In the Removable Pot, fluff rice with a fork. Add in lime zest, juice, and cilantro and stir to combine.
Serve hot and enjoy this zesty side dish!
