Asian Slaw

A large white bowl filled with an asian style slaw made of red and green cabbage. carrots, and fresh lime wedges.

Ingredients

  • 2 cups thinly sliced red cabbage

  • 1 red bell pepper, julienned

  • 1 cup carrots, julienned

  • 1 bunch green onions, diced small

  • ½ cup chopped cilantro

  • 6 tablespoons rice wine vinegar

  • 3 tablespoons vegetable oil

  • 1 tablespoon sesame oil

  • 5 tablespoons creamy peanut butter

  • 3 tablespoons soy sauce

  • 3 tablespoons brown sugar

  • 2 tablespoons fresh ginger root, peeled and minced

  • 3 to 4 garlic cloves, minced

Instructions

  1. Using your Mandoline, julienne the red bell pepper and carrots, and thinly slice the red cabbage. Transfer all sliced vegetables to a large bowl, then add the green onions and cilantro. Toss to combine.

  2. In a medium bowl, whisk together the rice vinegar, vegetable oil, sesame oil, peanut butter, soy sauce, brown sugar, ginger, and garlic until smooth.

  3. Pour the dressing over the vegetables and toss just before serving – fresh, crunchy, and totally slaw-some!
