Ingredients
3 tablespoons white sugar, divided
1 cup whole milk
4 large egg yolks at room temperature
1 teaspoon vanilla extract
Fresh raspberries, for garnish, optional

Instructions
On the stovetop in a small saucepan, moisten 2 tablespoons of the sugar with 1 tablespoon of water but do not stir. Over medium-high heat, boil until the sugar mixture turns amber and just begins to smell burnt.
Line up the Silicone Cups on the counter. Immediately distribute mixture between the Silicone Cups, taking caution as the sugar will be extremely hot.
In a microwavable cup or small pot, heat the milk until steaming.
In a small bowl, whisk the egg yolks, 2 tablespoons of sugar, and vanilla together. While whisking, pour in a little hot milk. Still whisking, add the remaining milk.
Plug in the Egg Bite Maker and add one Silicone Cups full of water to the Heating Plate. Pour custard mixture evenly into each Silicone Cup so that they are about ¾ full.
Close the Lid and cook for 12-15 minutes.
Leave the Lid open and let the custards sit for 2 minutes. Use tongs to carefully remove the Silicone Cups and place them onto a plate. Let the custards cool for another 10 minutes.
To remove from Cups and plate, run a thin butter knife blade around the inside of each Silicone Cup. Squeeze softly to unmold and release onto serving plates.
Garnish with fresh raspberries and enjoy these berry delicious bites!
