Ingredients

  • 1 cup raw almonds

  • 3 cups water

  • ½ teaspoon cinnamon (optional)

Instructions

  1. Place almonds in a bowl and cover with water. Let soak for at least 8 hours or overnight to soften. Drain and rinse before blending.

  2. Add soaked almonds and 3 cups fresh water to blender.

  3. Blend for 2–3 minutes, until completely smooth and emulsified.

  4. Pour mixture through a fine mesh strainer, nut milk bag, or cheesecloth into a large bowl or pitcher, pressing to extract as much liquid as possible.

  5. Stir in cinnamon if desired. Use immediately or store in fridge for up to 7 days. Homemade almond milk may separate after a few hours, but can be shaken to restore consistency.
