Ingredients

  • 1 lb round steak, cut into ¼-inch strips

  • ½ cup cold water

  • ¼ cup white vinegar

  • ½ teaspoon garlic powder

  • 1 teaspoon oregano

  • 1 teaspoon thyme

  • 1 teaspoon seasoning salt

  • 2 teaspoon cayenne pepper

  • 1 teaspoon paprika

  • 1 teaspoon black pepper

  • ½ teaspoon red pepper flakes

  • 1 teaspoon horseradish

Instructions

  1. Trim any fat from the beef, then place in the freezer for 1–2 hours until firm.

  2. While the meat chills, combine vinegar, water, garlic powder, oregano, thyme, seasoning salt, cayenne, paprika, black pepper, horseradish, and red pepper flakes in a gallon-sized plastic storage bag.

  3. Once firm, slice beef into ¼-inch strips against the grain. Add strips to the marinade and refrigerate for 24 hours.

  4. Blot off excess marinade and arrange strips evenly on dehydrator trays, leaving space between each piece. Set temperature to 165°F and dehydrate for about 8 hours, or until dry.
