Ingredients
4 medium eggs
2 to 3 tablespoons basil, cut into strips
6 cherry tomatoes, halved
½ cup shredded mozzarella
Salt and pepper, to taste

Instructions
Plug in Express Pocket & Omelette Maker and preheat.
Whisk the eggs in a bowl. Once maker is preheated, open the Cover and lightly coat each Cooking Surface with olive oil.
Pour the eggs evenly onto each Cooking Surface. Sprinkle with basil, mozzarella, and tomatoes. Close the Cover and lock the latch. Cook for 2 minutes, then open, flip the omelettes, and cook for 1 more minute, or until the eggs are set.
Remove with a heat-resistant nylon or silicone utensil. Season with pepper and serve – mornings just got egg-stra delicious!
