Ingredients

  • 1 ½ cups all-purpose flour

  • 1 cup yellow cornmeal

  • 1 ½ teaspoons sugar

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 2 cups buttermilk

  • 2 eggs

  • 6 tablespoons unsalted butter, melted

  • 2 ½ cups cheddar cheese, shredded

Optional Toppings/Fillings:

  • Shredded chicken or pork

  • Vegetarian chili

  • Sour cream

  • Extra cheddar cheese

  • Fresh cilantro

Instructions

  1. Whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt in a large mixing bowl.

  2. In a separate bowl, whisk together the eggs and buttermilk until smooth. Add the wet mixture to the dry ingredients in three increments, stirring until just combined. Gently fold in the melted butter and shredded cheese.
