Ingredients
4 large eggs
¼ cup shredded Swiss or Gruyere
2 tablespoons cottage cheese
Pinch of salt
Pinch of ground pepper
2 slices cheese of choice
2 sausage patties
2 English muffins
Hot sauce, ketchup, or other condiments
Salt and pepper to taste

Instructions
Combine eggs, shredded cheese, cottage cheese, salt, and pepper in a bowl or blender. Whisk or blend until fully combined.
Plug in the Egg Bite Maker and add one Silicone Cup full of water to the Heating Plate. Lightly grease each Silicone Cup with cooking oil. Pour the egg mixture evenly into each Silicone Cup so that they are about ¾ full.
Close the Lid and cook for 10-12 minutes.
Use tongs to carefully remove the egg bites. Squeeze the Silicone Cups to release them onto serving plate. Repeat with remaining mixture. Set aside.
On the stovetop, heat a griddle over medium heat. Place sausage patties on the griddle and cook until browned. Top with a slice of cheese to allow it to melt.
Cut English Muffins in half and lightly toast. Assemble sandwich by placing a sausage patty with cheese on the bottom of each English Muffin. Top each sausage patty with two egg bites then the other half of the English Muffin. Add salt or pepper as desired.
Serve with hot sauce, ketchup, or choice of condiments and enjoy an egg-cellent breakfast!
