A cluster of freshly baked mini cherry pies, each with a crimped edge and a lattice or cutout design on top, revealing the red cherry filling beneath.

Ingredients

  • 2 cups sour or dark sweet cherries

  • ½ cup white granulated sugar

  • 2 tablespoons cornstarch or tapioca starch

  • ½ teaspoon fresh lemon juice

  • ¼ teaspoon lemon zest or ⅛ teaspoon almond extract

  • 1 sheet premade pie crust dough or puff pastry dough

Instructions

  1. Place cherries in a saucepan over medium heat. Cover and cook until cherries release their juice. Simmer for 8-10 more minutes, stirring often.

  2. In a bowl, whisk sugar and cornstarch until smooth. Pour into hot cherries and combine thoroughly. Return to low heat, bring to a simmer, and cook until the filling has thickened, about 2-4 minutes. Add lemon zest and juice, stir to combine, and set aside.

  3. Cut 4 circles from the pie dough for the bottom crust using the Pie Base side of the Crust Cutter. Put one circle into the lower Cooking Surface and gently overlap the edges so that the crust fits neatly into the Mini Pie Maker.

  4. Cut 4 circles of dough for the top crust using the Pie Top side of the Crust Cutter. Set the 4 smaller upper crusts aside. Fill the lower crust with cherry filling, using about ¼ of cherry mixture.

  5. Top with one of the smaller circles to create the top crust.

  6. Plug in Mini Pie Maker and close the Lid to cook until brown, 6-8 minutes, checking after 6 minutes. Remove and cool completely. Repeat steps to make four cherry pies.
