Chocolate Soufflé

¼ cup sugar plus 1 tablespoon
3 eggs, separated
2 ounces melted bittersweet chocolate
Pinch of salt
¼ teaspoon cream of tartar

Instructions
Preheat oven to 375°F. Prepare a soufflé dish by greasing it with butter or a light coating of cooking oil. Sprinkle a thin layer of sugar over the dish, turn it upside down, and lightly tap to remove any excess sugar.
In the Mixing Bowl of the Stand Mixer, add egg yolks only and sugar and beat on Low until the mixture falls in a ribbon from Beaters. Mix in melted chocolate until well incorporated.
In a separate bowl, beat egg whites with salt and cream of tartar until soft peaks form. Continue to beat, gradually adding the remaining tablespoon of sugar, until the peaks are very stiff and glossy. Thoroughly stir a heaping spoonful of the egg white mixture into the chocolate mixture to lighten it. Then use a rubber spatula to fold in the remaining egg white mixture.
Transfer mixture to the prepared soufflé dish. Cover and refrigerate until ready to bake.
Bake until center is nearly set, 25-35 minutes for a single large soufflé. Do NOT open the oven during baking or the soufflé will fall.
