Ingredients
1 Pound Loaf
¾ cup water, room temperature (70°F)
1½ teaspoons extra virgin olive oil
¾ teaspoon salt
½ teaspoon honey
1 teaspoon finely chopped fresh rosemary
1¾ cups bread flour
½ cup whole wheat flour
3 tablespoons rye flour
1 teaspoon active dry yeast
½ cup pitted Kalamata olives, halved and blotted very well

1 cup + 2 tablespoons water, room temperature (70°F)
2¼ teaspoons extra virgin olive oil
1¼ teaspoons salt
1 teaspoon honey
1½ teaspoons finely chopped fresh rosemary
2¼ cups + 2 tablespoons bread flour
¾ cup whole wheat flour
¼ cup rye flour
1¼ teaspoons active dry yeast
¾ cup pitted Kalamata olives, halved and blotted very well

Instructions
Place all ingredients, except the olives, in the Bread Pan in the order listed. Attach the Kneading Blade and secure the Bread Pan in the Bread Maker.
Plug in the Bread Maker. Add the halved olives to the Ingredient Dispenser. Select the French Bread setting and choose the 1 lb. or 1.5 lb. loaf size. Press START/STOP to begin the cycle.
After 8–10 minutes of kneading, check the dough. It should feel tacky but not sticky.If too dry or firm, add water 1 teaspoon at a time. If too wet or sticky, add flour 1 tablespoon at a time.
When you hear 10 beeps at the end of the second rise, check the dough. If it has doubled in size, lightly press a finger near a corner: If it springs back, it needs more rising time. Check again in 15-20 minutes. If the indentation holds, and more than 15 minutes remains until baking starts, gently pull the dough away from the sides of the pan by about one-third.
When the Bread Maker cycle is complete, remove the Bread Pan from the machine. Carefully transfer the loaf to a wire rack and let cool completely before slicing. Unplug the Bread Maker.
Serve slices of bread with a dish of extra virgin olive oil for dipping — this loaf really rises to the occasion!
Chef's Tips
To blot olives thoroughly, place them between two paper towels and press firmly 3–4 times.
