Craving sourdough but don’t have a starter? This sourdough bread recipe without starter gets its signature tang from plain yogurt and lemon juice, so there’s no feeding, waiting or discard. Just add the ingredients to your Dash Everyday 1.5lb Bread Maker, select the Whole Wheat setting, and let the machine knead, rise and bake. It’s the easiest way to make a tangy, golden sourdough loaf in a bread machine.

 

Ingredients

  • 3/4 cup water

  • 1/2 cup plain yogurt

  • 1 tablespoon lemon juice

  • 1 tablespoon canola oil

  • 3 cups bread flour

  • 1 1/2 teaspoons salt

  • 2 teaspoons active dry yeast

Instructions

  1. Place all the ingredients, in the order listed, into the Bread Pan fitted with the Kneading Blade. Click the Bread Pan in place in the Bread Maker.

  2. Plug in the Bread Maker. Press the MENU button to select Whole Wheat, COLOR: Medium, LOAF SIZE: 1.5 lb. Press START/STOP to begin the bread-making process.

  3. At 8 to 10 minutes into the knead cycle, check the dough. It should feel tacky but not cling to your fingers. If it feels dry or hard, add water, 1 tsp at a time; if very sticky, add flour 1 tbsp at a time.

  4. When 10 beeps sound the end of the second rise, check the dough. If doubled in size, press a finger into the dough near a corner. If it springs back, it needs more rising. Check again in 15–20 minutes. If the indentation holds and more than 15 minutes remain until baking starts, gently pull the dough away from the sides of the Pan to deflate it by a third.

  5. When the Bread Maker cycle is complete, remove the Bread Pan from the machine. Transfer the bread to a wire rack to cool completely before slicing. Unplug the Bread Maker.

Chef's Tips

  • No starter? No problem. Traditional sourdough rises with a starter that takes days to make. This sourdough without a starter uses regular yeast and gets its classic tang from yogurt and lemon juice.

  • Made for your bread machine. Making sourdough in a bread machine is as easy as adding the ingredients and pressing start. Just select the Whole Wheat setting and let the machine knead, rise and bake.

  • Swap the lemon juice for white vinegar if you need to. Use the same amount for the same tangy flavor.

  • Use room-temperature ingredients, and spoon and level your flour. Cold yogurt slows the rise, and scooping straight from the bag packs in extra flour.

  • Let your bread machine sourdough cool completely before slicing, so the inside sets. If the Kneading Blade stays in the bottom of the loaf, remove it before you slice.
