Easy Huevos Rancheros

Huevos rancheros with sunny-side-up eggs on crispy tortillas topped with fresh salsa, garnished with cilantro and lime — a classic Mexican breakfast dish.

Ingredients

  • 2 small corn tortillas

  • 2 eggs

  • ¼ cup diced tomatoes

  • ½ cup crumbled cotija or feta cheese

  • ¼ avocado, sliced

  • ¼ cup black beans, rinsed and heated

  • 1 tablespoon olive oil or butter

  • Salt and pepper, to taste

Instructions

  1. Preheat Griddle for 2–3 minutes. Lightly grease with olive oil or butter.

  2. Add the tortillas one at a time and cook until warm and slightly crisp. Remove and set aside.

  3. Crack the eggs onto the griddle and close the cover. Cook until the whites are set, but yolks remain runny, about 2–3 minutes.

  4. Place the eggs on top of the tortillas. Top with black beans, cheese, avocado, and diced tomatoes.

  5. Serve immediately and enjoy this egg-citing Southwest-style breakfast!
