Ingredients

  • 4 tablespoons butter

  • ½ large onion, cut into large wedges

  • 1 28-ounce can tomatoes, whole peeled or crushed

  • 1½ cups water, vegetable stock, or chicken stock

  • 1 teaspoon salt, more to taste

  • Toasted croutons (optional)

Instructions

  1. On the stovetop, melt butter over medium heat in a Dutch oven or large saucepan.

  2. Add onion wedges, water, tomatoes with their juices, and salt.

  3. Bring to a simmer. Cook, uncovered, for about 40-45 minutes. Stir occasionally and add more salt if needed.

  4. Use Hand Blender to blend until smooth.

  5. Distribute amongst serving bowls and garnish with toasted croutons.

  6. Serve with a simple grilled cheese sandwich for an easy anytime meal.
