Ingredients

1 Pound Loaf

  • ⅔ cup water (70°F) 

  • 2 teaspoons olive oil 

  • 1 tablespoon sugar 

  • ½ teaspoon + ⅛ teaspoon kosher salt 

  • 2 cups bread flour or unbleached all-purpose flour 

  • 1 teaspoon active dry yeast 

1.5 Pound Loaf

  • 1 cup water (70°F) 

  • 1 tablespoon olive oil 

  • 1½ tablespoons sugar 

  • 1¼ teaspoons kosher salt 

  • 3 cups bread flour or unbleached all-purpose flour 

  • 1 teaspoon active dry yeast

Instructions

  1. Place all ingredients into the Bread Pan in the order listed and secure it in the Bread Maker. Select the French Bread program, choose your loaf size, and press START/STOP. 

  2. About 8-10 minutes into kneading, quickly check the dough. It should feel tacky but not sticky. Add water by the teaspoon if dry, or flour by the tablespoon if sticky. 

  3. You’ll hear 10 beeps when the second rise ends. Check for doubled volume. Gently press a fingertip into the dough — if the indentation returns slowly, it’s ready. If it springs back immediately, let it rise a bit longer and check again in 15-20 minutes. If the indentation holds and baking hasn’t begun, gently loosen the dough from the sides of the Pan to deflate it by about one-third. 

  4. When the baking cycle finishes, remove the Bread Pan, turn out the loaf onto a wire rack, and let cool completely before slicing. 

  5. Serve and enjoy a loaf that is pain-fully delicious!
