Ingredients

  • 3 cups flour

  • 1 cup yellow cornmeal

  • ¼ cup sugar

  • 2 tablespoons baking powder

  • 2 teaspoons salt

  • 2 cups milk, extra to thin out batter

  • 3 eggs, lightly beaten

  • ½ pound (2 sticks) butter, melted

  • 2 cups cheddar cheese, grated

  • ⅓ cup chopped scallions, plus extra for garnish, about 3 scallions

  • 3 tablespoons minced and seeded jalapeño peppers

Instructions

  1. In a large mixing bowl, combine flour, cornmeal, sugar, baking powder, and salt.

  2. In a separate bowl, combine the milk, eggs, and butter. Add wet ingredients into the dry and stir to combine. Add in 2 cups of cheddar cheese, scallions, and jalapeños. Stir to combine.

  3. Preheat the Belgian Waffle Maker and grease both cooking surfaces with a light coating of cooking oil. Pour ⅔-¾ cup of batter into the Belgian Waffle Maker and cook until crispy, about 4-5 minutes per waffle. Repeat with remaining batter. 

  4. Serve & enjoy this spicy, savory addition to any meal.
