Ingredients

  • ½ cup shredded carrot

  • 3 tablespoons chopped onion

  • ½ cup vegetable broth

  • ½ cup silken tofu

  • 1 garlic clove, chopped

  • ¾-inch piece fresh ginger, chopped

  • 2 ½ tablespoons sweet white miso

  • 2 tablespoons rice vinegar

  • 2 tablespoons grapeseed or canola oil

  • ¼ teaspoon roasted sesame oil (optional)

  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a small saucepan, combine carrot, onion, and broth. Bring to a boil, then reduce heat and simmer uncovered for 5 minutes, until carrot is soft. Let cool for 5 minutes.

  2. Transfer carrot mixture to blender. Add tofu, garlic, ginger, miso, vinegar, oils, salt, and pepper. Blend until smooth and creamy.

  3. Pour into a small bowl or jar. Adjust seasoning with additional salt and pepper if needed. Cover and refrigerate for 2 hours to allow flavors to meld. Dressing will keep tightly covered in the refrigerator for up to 2 days.
