Ingredients
½ large Vidalia onion, peeled, ends cut off and sliced into roughly ½-inch rings
1 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1½ tablespoon vegetable oil
½ teaspoon sea or kosher salt

Mix breadcrumbs with oil and salt, ensuring the crumbs are heavily coated in oil. Dredge onion rings in flour.

Dip the rings into beaten eggs and then into breadcrumb mixture. Manually press and squeeze the crumbs onto the onion rings to get them to stick.

Place rings into the basket in two layers, two on the bottom and two on top, depending on ring size. Cook for eight to ten minutes.

Remove and serve with preferred dipping sauce. Enjoy, and don’t forget to circle back for more!
