Pineapple Fried Rice

Ingredients
1⁄4 cup pineapple, diced small
1⁄2 cup frozen peas and carrots
1⁄4 cup onion, diced
- 2 tbsp olive oil, divided
- 2 tsp sesame oil, divided
- 1⁄2 tsp ginger powder
- 1⁄4 cup green onion, sliced
3⁄4 cup short grain brown rice
1 1⁄2 cups chicken broth
- 1 egg, scrambled
Directions
Add brown rice and chicken broth to Removable Pot and cook.
While the rice is cooking, use a medium skillet, to scramble the egg. Set aside. Then sauté peas, carrots, and onion on the stovetop with 1 tablespoon of olive oil and 1 teaspoon sesame oil until onions are translucent.
Add pineapple, egg, and green onion to sautéed veggies. Remove from pan and set aside. When the rice is finished cooking, heat the remaining tablespoon of olive oil and 1 teaspoon of sesame oil in a pan and add the rice.
Stir for about 1 minute, then add other sautéed veggies. Cook for an additional 2-3 minutes.
Serve hot by itself or as a side and enjoy this tropical treat!
