Ingredients

  • ¼ cup pineapple, diced small

  • ½ cup frozen peas and carrots

  • ¼ cup green onion, sliced thin

  • 2 tablespoons olive oil, divided

  • 2 teaspoons sesame oil, divided

  • ½ teaspoon ginger powder

  • ¼ cup green onion, sliced

  • ¾ cup short grain brown rice

  • 1½ cups chicken broth

  • 1 egg, scrambled

Instructions

  1. In the Rice Cooker, add brown rice and chicken broth to Removable Pot. Cover and cook for 20-25 minutes, about one full cooking cycle.

  2. While the rice is cooking, use a medium skillet to scramble the egg. Set aside. In the same skillet, sauté peas, carrots, and onion with 1 tablespoon of olive oil and 1 teaspoon sesame oil until onions are translucent.

  3. Add pineapple, egg, and green onion to sautéed veggies. Remove from pan and set aside. When the rice is finished cooking, heat the remaining tablespoon of olive oil and 1 teaspoon of sesame oil in a pan and add the rice.

  4. Stir for about 1 minute, then add other sautéed veggies. Cook for an additional 2-3 minutes.

  5. Serve by itself or as a side and enjoy this tropical treat!
