Portobello Burgers

Grilled portobello mushroom burger with fresh mozzarella, tomato slices, and arugula on a toasted bun, served with crinkle-cut sweet potato fries. A hearty vegetarian meal packed with flavor.

Ingredients

  • 2 portobello mushrooms

  • ¼ cup pesto

  • 2 whole-grain hamburger buns

  • 1 medium tomato, sliced

  • 2 slices of goat cheese

  • 4-6 basil leaves

  • salt and pepper, to taste

Instructions

  1. Place the portobello mushrooms on the Baking Tray, rounded side up. Place the Rack in the Oven and the Baking Tray on the Rack.

  2. Set the Function Dial to Bake and bake the mushrooms for 15 minutes at 400°F. Flip the mushrooms and spread pesto evenly over each one. Bake for another 10 minutes.

  3. Remove the mushrooms and toast the hamburger buns. On the bottom half of each bun, layer a tomato slice, a portobello mushroom, a slice of goat cheese, and two basil leaves. Top with the remaining bun halves and serve!

  4. Serve warm for a hearty, veggie-forward meal made with so mush love in every bite!
