Rotisserie Chicken
Ingredients
1 (3–4 lb) whole chicken
3 cloves garlic
4 tablespoons butter
1-2 lemons, some for garnish
1 small onion, peeled and roughly chopped
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon kosher salt
½ teaspoon freshly cracked black pepper
Fresh herbs, rosemary and/or thyme (optional)

Instructions
In a small bowl, mix together butter, cumin, paprika, salt, pepper, and the juice of half a lemon. Gently rub this mixture underneath the skin of the chicken breast and over the outside of the chicken, including the drumsticks.
Remove any contents from the chicken cavity. Season the inside with salt and pepper. Add fresh herbs, if using. Slice the lemon and place half inside the cavity along with the onion and garlic. Truss the chicken with kitchen twine, then thread the Rotisserie Spit through the center of the chicken, securing it tightly with the Rotisserie Forks.
Insert the Spit into your Air Fryer Oven and cook at 400°F for about 60 minutes, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F.
Carefully remove the chicken and tent lightly with foil. Let rest for 10 minutes before carving.
Serve hot with mashed potatoes or serve cold for easy snacking at BBQs and picnics. Enjoy this rotisserie chicken that’ll have everyone flocking to the table!
