Ingredients

  • 2–3 pounds fresh tomatoes, cut into ¼-inch slices

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • Dash of salt and pepper

  • 5 garlic cloves

  • 10 fresh basil leaves

  • 2 cups olive oil

Instructions

  1. Arrange the tomato slices on the Food Trays, leaving space between each slice. Sprinkle lightly with salt, pepper, dried oregano, and dried basil.

  2. Set the dehydrator to 150°F and dry the tomatoes for 10 hours, flipping halfway through (around the 5-hour mark).

  3. Check at 8 hours to make sure they’re not over-dried — they should be slightly pliable, not brittle.

  4. Once dried, layer the tomatoes in a jar with garlic cloves and fresh basil. Sprinkle in the remaining oregano, salt, and pepper as you go. Pour olive oil over the top until all ingredients are completely submerged. Cover and refrigerate.

  5. Serve these de-vine bites as a topping for pasta, salads, or crostini!
