A mini waffle maker and a white square plate holding four round egg bites, each filled with visible pieces of red bell pepper, green zucchini, and spinach.

Ingredients

  • 2 eggs  

  • ¼ cup pepper jack cheese, shredded

  • 1 tablespoon cornstarch

  • ¼ teaspoon garlic powder 

  • 3-5 fresh spinach leaves, roughly chopped

  • 2-3 tablespoons of red bell pepper, diced small

  • Salt and fresh ground black pepper to taste

  • Garnish with fresh chopped parsley (optional)

Instructions

  1. In a small mixing bowl, combine eggs, chopped spinach, red bell pepper, pepper jack cheese, and cornstarch. Whisk until smooth. 

  2. Plug in the Egg Bite Maker and add one Silicone Cup full of water to the Heating Plate.  Lightly grease each Silicone Cup with cooking oil. Pour the egg mixture evenly into each Silicone Cup so that they are about ¾ full.

  3. Top with red pepper, spinach, and cheese. If desired, leave some toppings to garnish. 

  4. Close the Lid and cook for 10-12 minutes. 

  5. Use tongs to carefully remove the egg bites. Squeeze the Silicone Cups to release them onto serving plate. Repeat with remaining mixture. 

  6. Garnish with salt, fresh ground black pepper, and parsley.

  7. Serve and veg out with these garden-fresh breakfast bites!
