Sweet Potato Waffles

Ingredients

  • 1 medium sweet potato

  • 1 cup all-purpose flour

  • 1 tablespoon baking powder 

  • 1 teaspoon cinnamon 

  • 3 tablespoons maple syrup 

  • 1 egg 

  • ¾ cup milk

  • 1 tablespoon oil 

  • 1 teaspoon vanilla extract 

Optional Toppings

  • ¼ cup blueberries 

  • 1 tablespoon peanut butter or almond butter 

  • 1 teaspoon maple syrup or honey

Instructions

  1. Preheat oven to 400°F. Peel sweet potato and dice into chunks. Roast for 45 minutes. Remove and mash with a potato masher or hand mixer.

  2. In a small bowl, combine flour, baking powder, and cinnamon and mix.

  3. In a separate mixing bowl, add sweet potato, egg, milk, maple syrup, and vanilla. Whisk until smooth. Combine dry ingredients with wet.

  4. Preheat Waffle Maker and grease both cooking surfaces with a light coating of cooking oil. 

  5. Pour ¾ cup of batter into the Waffle Maker and cook until crispy, about 3-4 minutes per waffle. Repeat with remaining batter. 

  6. Serve with fresh blueberries and butter for a better-for-you snack that’ll hit the sweet spot!
