Ingredients

  • 3 eggs

  • 1 teaspoon olive oil

  • ¼ cup yellow onion, diced

  • ¼ clove garlic, minced

  • ¼ cup roasted red peppers, sliced

  • ¼ cup cherry tomatoes, halved

  • 2 tablespoons Parmigiano Reggiano, grated

  • ¼ cup fontina or other semisoft cheese, shredded

  • Salt and pepper, to taste

Instructions

  1. In a medium bowl, whisk the eggs until fluffy. Stir in the cheeses and set aside.

  2. Drizzle olive oil onto Griddle and heat. Once hot, add onion and garlic, then sauté until fragrant. Add roasted peppers and tomatoes, then cook for 1–2 minutes.

  3. Pour the egg and cheese mixture over the vegetables and season with salt and pepper.

  4. Close the lid and cook on low for 6–8 minutes, or until the top is set. Check occasionally to prevent over-browning.

  5. Carefully remove the frittata, slice, and mangia bene!
