Ingredients

  • ¼ cup flat-leaf parsley, coarsely chopped

  • 1 medium green onion (green and white parts), chopped

  • 1 large garlic clove, chopped

  • ½ cup silken tofu

  • 1 tablespoon grapeseed oil or canola oil

  • 1 teaspoon fresh lemon juice

  • 2 tablespoons snipped chives

  • 1 tablespoon snipped fresh dill

  • Salt and freshly ground pepper, to taste

Instructions

  1. Add parsley, green onion, garlic, silken tofu, oil, and lemon juice to blender.

  2. Blend until smooth and creamy, pausing to shake or stir if needed to help the ingredients combine.

  3. Pour into a small bowl and stir in the chives and dill. Season to taste with salt and pepper.

  4. Cover and refrigerate for 1 hour to allow the flavors to meld. Dressing will keep tightly covered in the refrigerator for up to 2 days.

  5. Use for dipping, dressing, or drizzling—this ranch is kind of a big dill no matter how you serve it.
