Ingredients
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 large egg
- 1 cup milk
- 2 tablespoons unsalted butter, softened
- 1 cup semi-sweet chocolate chips
- 1 teaspoon coconut oil
For chocolate dip:
Directions
- In a medium bowl, mix together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together milk, egg, and melted butter. Add the wet ingredients to the dry and mix until combined.
- Grease the Mini Waffle Maker with a light coating of cooking oil. Add 1½ tablespoons of batter to the Mini Maker. Insert an ice pop stick into the Mini Maker so that it rests 1” into the batter. Cook until golden brown, about 3-4 minutes. Repeat with remaining batter.
- For chocolate dip, mix chocolate chips and coconut oil in a microwave-safe bowl. Microwave for 30 seconds at a time, stirring in-between, until smooth.
- Once each waffle is attached to an ice pop stick, hold the edge of each stick furthest from the waffle and dip the waffle into the chocolate.
- Use the ice pop stick to twirl each waffle while pulling away from the chocolate dip bowl.
- Top with sprinkles to serve and start poppin’!
Recipe Note
Chef Tip: Use 1½ tablespoons of batter for perfect pops.
