Zucchini Parmesan Waffles

A stack of three zucchini parmesan waffles with a creamy sauce on the top and dripping down the side.

Ingredients

  •  2½ cups zucchini, shredded (about 1 large or 2 small zucchini squash)  

  • 1 large egg  

  • ¼ cup whole milk  

  • ½ cup grated Parmigiano-Reggiano  

  • 1 tablespoon chopped parsley   

  • 2 tablespoons flour  

  • 2 pinches of salt  

  • Pinch of pepper

Instructions

  1. Place shredded zucchini in a colander and toss with a pinch of salt. Let sit for 30 minutes.   

  2. Rinse zucchini well with cold water and squeeze out excess water. Dry on paper towels.   

  3. In a medium bowl, whisk together egg, milk, Parmigiano, and chopped parsley.

  4. In a small bowl, combine flour, salt, and pepper.   

  5. Add the seasoned flour mixture to the egg mixture. Fold in the zucchini. 

  6. Preheat Waffle Maker and grease both cooking surfaces with a light coating of cooking oil. Pour ¾ cup of mixture into the Waffle Maker and cook until crispy, about 3-4 minutes per waffle. Repeat with remaining batter. 

  7. Serve as a savory snack or appetizer and enjoy this very veggie treat!
