Ingredients

  • 1 cup buckwheat flour

  • 1½ teaspoons baking powder

  • 1 teaspoon baking soda

  • 2 large eggs, separated

  • 4 tablespoons melted salted butter

  • 1 cup skim milk

  • ¼ cup water

  • Pinch of sea salt

Instructions

  1. Mix together buckwheat flour, baking powder, baking soda, and salt in a large bowl.

  2. Beat egg whites until fluffy and stiff peaks form when the beaters are lifted. Set aside.

  3. Whisk together the egg yolks, milk, melted butter, and water in a medium bowl. Add the wet ingredients to the dry ingredients and mix until well combined. Fold the egg whites into the batter.

  4. Add 3½ tablespoons of batter to your Mini Waffle Maker and cook until golden brown on both sides, about 3-4 minutes.
