Instructions
In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract until well combined.
Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the rainbow sprinkles.
Preheat the Dash Mini Waffle Maker and lightly brush the Cooking Surface with oil or melted butter. Pour 3½ tablespoons of batter into the Waffle Maker and cook until golden brown, about 3-4 minutes. Repeat with remaining batter to make 5 waffles.
To make the frosting, beat the butter in a medium bowl until smooth. Add the confectioners’ sugar, vanilla extract, and heavy cream, and continue beating until light and fluffy.
Layer the waffles with frosting between each one, spreading a generous amount on top.
Decorate with additional sprinkles, slice, and enjoy this colorful confetti waffle cake—perfect for any celebration!
Chef's Tips
To take the vanilla flavor over the top, substitute vanilla bean paste for vanilla extract in the frosting.
