Ingredients

  • 2 pounds baking potatoes, peeled, coarsely shredded, and squeezed dry 
  • 2 large eggs, lightly beaten 
  • 3 tablespoons all-purpose flour 
  • 1½ teaspoons kosher salt 
  • 1 teaspoon baking powder 
  • ¾ cup shredded extra-sharp cheddar cheese, plus more for topping 
  • 3 tablespoons melted butter, plus more for brushing 
  • ½ cup crumbled cooked bacon, plus more for topping {optional} 
  • ⅓ cup chopped chives, plus more for topping 
  • Sour cream, for topping 
  • Salt and fresh ground black pepper, to taste

Instructions

  1. Insert Waffle Plates into the Flex Press Grill and begin to preheat the Grill.

  2. In a large bowl, mix potatoes with eggs, flour, salt, baking powder, ¾ cup of cheese, and 3 tablespoons of butter. Fold in ½ cup of bacon and ⅓ cup of chives.

  3. Grease the cooking surfaces with a small amount of cooking oil and add ⅔ cup of the potato mixture onto the bottom Waffles Plate. Close Lid and cook until the waffle is golden and crisp, about 5 to 7 minutes. To keep warm, transfer to a rack in the oven. Repeat with the remaining potato mixture.

  4. Season with salt and pepper to taste and top with sour cream, crumbled bacon, cheddar, and chopped chives.

  5. Serve this savory snack on its own or as part of a full breakfast!
