Ingredients

Pineapple Coconut Waffles

  • ⅔ cup coconut flour

  • 1 teaspoon baking powder

  • Pinch of sea salt

  • 3 tablespoons macadamia nut butter (or almond butter)

  • 2 tablespoons maple syrup

  • 2 tablespoons melted coconut oil

  • 4 large eggs

  • ⅓ cup coconut milk

  • ⅓ cup finely chopped fresh pineapple or drained crushed pineapple

Coconut Syrup

  • 1 (15-ounce) can coconut milk

  • ¼ cup maple syrup

  • 1 teaspoon almond extract

Optional Toppings

  • Sliced bananas

  • Chopped macadamia nuts

Instructions

  1. In a medium bowl, whisk together coconut flour, baking powder, and sea salt.

  2. In a separate bowl, whisk together macadamia nut butter, maple syrup, coconut oil, eggs, and coconut milk until smooth.

  3. Add dry ingredients to wet ingredients and mix until combined. Gently fold in pineapple.

  4. Add 3 tablespoons of batter to your Mini Waffle Maker and cook until golden brown on both sides, about 3-4 minutes. Repeat with remaining batter.

  5. In a small saucepan, combine maple syrup and coconut milk over medium heat. Bring to a gentle boil.

  6. Boil for 2 minutes, then remove from heat and stir in almond extract.
