Ingredients

Sweet Potato Waffles

  • ¾ cup sweet potato purée

  • 1½ tablespoons canola oil

  • ½ cup whole milk

  • 1 large egg

  • ½ cup all-purpose flour

  • ½ teaspoon baking powder

  • ¼ cup light brown sugar

  • 1 teaspoon salt

Egg & Bacon Sandwich

  • 2 large eggs

  • 3 tablespoons whole milk

  • ¼ teaspoon kosher salt

  • Pinch of ground black pepper

  • 2 teaspoons canola oil

  • 2 slices bacon

  • 2 teaspoons honey (optional)

Instructions

For the Waffles

  1. In a large bowl, mix the sweet potato purée, canola oil, milk, and egg until smooth.

  2. In a separate bowl, whisk together the flour, baking powder, brown sugar, and salt. Add the dry ingredients to the wet and mix until no clumps remain.

  3. Preheat the Dash Mini Waffle Maker and lightly brush the Cooking Surface with oil if needed. Add about 3½ tablespoons of batter and cook until golden brown on both sides, about 2-3 minutes. Repeat with remaining batter.

For the Sandwiches

  1. Preheat oven to 400°F (200°C).

  2. Place bacon on a baking sheet and cook in the oven until crispy.

  3. While bacon cooks, whisk together the eggs, milk, salt, and pepper in a small bowl.

  4. Heat oil in a small frying pan over medium heat. Add eggs and reduce heat to low, stirring continuously until softly scrambled.

  5. To assemble, lay one waffle flat and top with scrambled eggs, bacon, and a drizzle of honey if desired. Top with another waffle and enjoy this sweet and savory breakfast sammie!
