Vegan Veggie Delight Pizza

Ingredients
- 1 tablespoon olive oil, divided
- 1 small bell pepper, thinly sliced
- ½ cup mushrooms, chopped small
- ½ cup mixed veggies: eggplant, broccoli and/or olives
- 1 small onion, sliced thin
- 2-3 cloves garlic, minced
- 1 teaspoon salt
- Pepper, to taste
- 16-ounce store-bought pizza dough, thawed if frozen
- 2-3 tablespoons all-purpose flour, for rolling and shaping dough
- ½ cup pizza sauce
- ¾ to 1 cup vegan mozzarella cheese, shredded

2-3 tablespoons vegan Parmesan cheese, grated

1 teaspoon crushed red pepper

1 teaspoon dried oregano

Fresh basil, roughly chopped

Directions
Prepare the toppings:
Heat up the skillet by plugging it in and open it to have the two skillets face up, add 1/2 tablespoon of oil to each side. Once hot, add the veggies to both sides of the skillet. Sprinkle with salt and fresh ground black pepper. Cook the veggies about 5-7 minutes. Stirring frequently until fragrant and soft, once cooked, remove from skillet and set aside.
Next, start to prepare the pizza dough.
Roll out the dough
Roll out dough on a lightly floured pizza paddle or cutting board. If it's hard to roll, let it rest for 5 minutes so it can come to room temperature. For a large pizza, I like to roll my dough into about a 12-inch diameter circle. Place the dough on the Double Up Skillet, the bottom side.
Add pizza sauce in a light layer all over the pizza, leaving about 1/4-inch crust around the edges. Top the pizza with shredded cheese and desired veggies. Season with fresh ground salt and black pepper. And vegan parmesan cheese and seasonings-if using.
Cooking the pizza
Cover the skillet and cook for 10-12 minutes, or desired doneness. The cheese should be melted, the bottom crust firm and brown and the toppings cooked and steamy.
Chef Tip: If the pizza dough is too chewy, transfer pizza to a 400 degree oven to melt the cheese more and cook the dough through.
Slice & serve
Transfer the pizza to a cutting board and allow pizza to rest for 7-10 minutes before slicing. Add chopped basil, spices and more vegan Parmesan cheese, if desired. Cut pizza into slices, add extra seasonings and enjoy.
