Ingredients
1 cup flour
1 tablespoon sugar
2 teaspoons baking powder
¼ teaspoon salt
1 egg
1 cup milk
2 tablespoons vegetable oil
Mixed Berry Jam:
3 cups fresh berries, raspberries and strawberries
½ cup honey
1 8-ounce package cream cheese

Instructions
In a medium bowl, sift flour, sugar, baking powder, and salt. Set aside.
In a separate small mixing bowl, whisk egg, milk, and oil until combined.
Add wet ingredients to the dry and mix until just combined.
Preheat the Mini Waffle Maker and grease with a light coating of cooking oil. Pour 3-4 tablespoons of batter into the Mini Waffle Maker and cook until golden brown, about 3-4 minutes. Repeat with remaining batter. Set waffles aside to cool.
In a medium saucepan, combine berries and honey. Bring to a boil over medium-high heat, stirring frequently. Reduce heat to low and continue to cook uncovered, until mixture is slightly thickened and saucy, about 12-15 minutes. After removing from heat, use a potato masher or the back of a large spoon to mash berries. Cool completely at room temperature for at least one hour.
Once waffles are cooled, spread 1-2 tablespoons of cream cheese over the waffles and add 1 tablespoon of the cooled jam. Top with another waffle to make a sandwich.
Serve and go ahead and jam out!
