Ingredients
Waffles:
1 cup flour
2 teaspoons baking powder
¼ teaspoon salt
½ cup shredded coconut, more to garnish
1 bar of white chocolate, about 3½ ounces
1 cup of milk
1 egg
2 tablespoons coconut oil
Ice Cream Sandwiches:
Ice cream of choice
Shredded coconut, optional

Instructions
In a medium bowl, combine flour, baking powder, salt, and shredded coconut.
In a separate bowl, whisk together milk, egg, and coconut oil.
Add wet ingredients to dry and mix together. Once the batter is formed, let rest for 3 minutes.
Finely chop white chocolate bar and mix it into the batter.
Preheat the Mini Waffle Maker and grease with a light coating of cooking oil. Pour 3-4 tablespoons of batter into the Mini Waffle Maker and cook until golden brown, about 3-4 minutes. Repeat with remaining batter.
Repeat with remaining batter. Allow cooked waffles to cool on a wire rack.
Once waffles are cool, build the ice cream sandwiches. On a small plate, add a layer of shredded coconut.
Top one waffle with an ice cream scoop, top with another waffle, and use hands to press. Repeat with remaining waffles. Roll the edges of each sandwich through the prepared shredded coconut.
Serve immediately and go coconuts for this fun frozen treat!
